Induction cooktops utilize magnetic induction to heat the vessel directly. The cookware must contain a ferromagnetic material in its base, such as cast iron or magnetic stainless steel (like AISI 430). The magnetic field generated by the cooktop's coil induces eddy currents in the ferromagnetic layer, generating heat directly within the pan.
Impact-bonded cookware has a magnetic stainless steel disc pressed onto the bottom of an aluminum or stainless steel pan body under high pressure. Multi-ply clad cookware features layers of metal (typically stainless steel and aluminum) stretching all the way up the sides of the pan. Multi-ply offers more even heat distribution along the walls, while impact-bonded bases are highly cost-effective.
